3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed left side of prep unit holding at 60F ambiently. Observed the right side of the same unit reading 39F ambient. See temp chart for food items. Observed salad unit drawers reading slightly warm at 45F. Ambient temps read 39-43F. Prep top doors were left open during the lunch rush. Doors were closed and temps began dropping. CDI - Items were removed from non-working side of unit and placed into subsequent reach in coolers. EHS will follow up on Monday to check cooler operation.
