#22 · Proper cold holding temperatures −1.5
Corrected during inspection
3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed chicken, marinara, cheese in tall reach in holding above 41F. EHS found that employees make pizzas to order. Facility does not have enough cold holding equipment for items that need to be held cold while in prep. The facility has a sheet tray housing containers of pizza topping. The entire tray is removed from the tall reach in, placed on the prep table, held there to make pizzas, then placed back into the tall reach in once completed. Pizzas are served during the lunch hours of 11am-2pm. On average the facility makes about 10-15 pizzas a day throughout that lunch period. During that time frame pizza toppings do not have the opportunity to cool. EHS checked the cooling rate of the chicken and cheese. The cooling rate for the chicken was -.06F. The cooling rate for the cheese was .06. Cooling parameters cannot be achieved if the cooling process is constantly interrupted. EHS will require that foods either be held on TPHC, space be provided in prep top unit to accommodate for pizza toppings or more equipment be obtained to ensure compliance with food safety standards. CDI- Discarded. Inspector comments: Per permit, “Plans and specifications must be submitted for review and approval before any equipment is added or removed and /or remodeling of any part of the FOOD ESTABLISHMENT premises.” Facility added 2 Waring WPO100 pizza ovens several months ago. Spec sheet was reviewed today during inspection and pizza ovens are approved. Facility already had pizza on the menu, this increases the capacity of pizzas to be made but not beyond what facility can handle based on space and equipment. Per permit, “The PERMIT HOLDER shall obtain prior written approval from the REGULATORY AUTHORITY before the addition of customer self-service food or addition of buffet style dining.” EHS observed self-serve dining in the public dining space upon arrival. PIC stated they started this procedure in April. Facility did not receive approval prior to adding the self-serve dining. Dining does not meet requirements based on food protection as table is against a half wall with seating behind it, and the food shields do not meet the current setback guidance. EHS emailed PIC a copy of the food shield guidance during visit. Self-serve dining was immediately discontinued and food items were voluntarily discarded. EHS provided PIC with main telephone number and information to speak with a plans examiner regarding equipment and permit amendments should they want to pursue the self-serve dining concept.

EHS emailed PIC a copy of the TPHC form to fill out for products that will no longer be self-serve, but offered for sale. TPHC procedure template may be found at: www.mecknc.gov/foodsafety
